The Journey
Hello World,
I am Sudarshana Balachandran. Born and raised across multiple cities in India, exploring great food has always been a big part of my formative years. As a child from a typical south Indian family, I’m a trained classical singer and an engineer by vocation. I worked in the Indian IT industry for 5 years as a tech consultant, before taking a break from work, and following my passion for food, perfecting recipes and harboring thoughts of being a chef.
Finally, I took the plunge in 2020, completely changed track and started my journey with food. This journey took me to pursue a diploma in culinary arts from City & Guilds. I worked with the best chefs at Taj - Bangalore and moved to Seattle to work as a line cook at Canlis - Seattle. Working at a fine dining restaurant like Canlis - gave me a different perspective towards food production, bringing structure to my work and experimenting with flavors. With this new-found confidence I would like to present to all India Weekly - my culinary passion and Dabbewali - my first offering. With Dabbewali, I aim to bring best of my food experience to your doorstep.
